Ingredients: 2-3 zucchinis 1 15.5 oz. can of chickpeas, rinsed and drained 8 oz. cherry tomatoes, halved spicy tahini sauce (recipe follows!) Directions: Peel 2-3 zucchinis and cut into noodles with a spiralizer. Toss with 2 teaspoons salt, and place in a colander to drain for 30 minutes. Bring a pot of water to boil. ½ cup tahini 1 teaspoon sriracha ½ teaspoon garlic powder Salt and pepper to taste 1 tablespoon nutritional yeast 2 teaspoons wheatgrass or barley powder ¼ lemon juice ¼ cup warm water (add 1 more tablespoon at a time until desired consistency) Toss all ingredients in a blender or food processor.
