INGREDIENTS
2 cups of fresh basil leaves
1/4 cup olive oil
1 clove garlic
1/4 cup pine nuts
1/2 cup Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Pines Barley Grass Powder
Place all ingredients in a food processor and process until smooth.
To make the pasta
1/2 cup brown rice pasta
3 tbsp pesto sauce
1 clove garlic, sliced
2 tbsp olive oil
5 pieces of sun dried tomato
1/4 cup cooked sweet peas
DIRECTIONS:
- Cook pasta in a large pot of boiling water until done.
- Meanwhile, heat the oil in a frying pan over medium low heat. Add sweat peas, tomato, and garlic. Cook about 2 minutes. Turn off the heat.
- Transfer the pasta (no water) into the pan using kitchen tongs. Add pesto and 1/4 cup of pasta water. Toss to coat pasta in pesto.
- Taste, add more salt and pepper if desired. Garnish with fresh Parmesan.
