Pumpkin Spice Muffins
Here is a great way to use add more antioxidant greens to a pumpkin recipe!
Ingredients for Pumpkin-Spice Muffins:
- 4 bananas
- 4 eggs
- 1/4 cup pumpkin puree
- 1 tbl pumpkin pie spice
- 4 tbl coconut oil
- 1/2 cup coconut flour
- 1/4 cup (or less) maple syrup
- 1 tsp baking soda
- 1 tsp vanilla extract
- pinch of sea salt
- 2 tbl of PINES Wheatgrass
Preparation:
Place all ingredients into a food processor. Put into muffin tins coated with a little coconut oil. Bake at 350 degrees for 20 minutes. Makes 12 or more muffins.
