Matcha Barley Grass Muffins

1 cup oat flour 

¾ cup almond flour

3 tablespoons matcha powder

1 tablespoon Pines Barley Grass powder

½ teaspoon cinnamon

A pinch sea salt

1 teaspoon baking powder

1 flax egg (1 tablespoon ground flax mixed with 3 tablespoons water)

¼ cup melted coconut oil 

½ cup coconut sugar

½ cup room temperature almond milk

2 tablespoons maple syrup

¼ cup chocolate chips

¼ cup pistachios


Mix everything in a bowl then pour into lined or silicone cupcake tins (makes 9 muffins), sprinkle over chocolate chips, pistachios, and coconut sugar. Bake at 375 degrees Fahrenheit for around 15 minutes, until slightly golden and a toothpick can be cleanly removed; let cool and enjoy!
