Wheatgrass Waffle with Greek Yogurt

"Up close and personal to this morning's pre-long run waffles! I adapted a recipe to a single serving with a full serving of Pines Wheat Grass from the @wheatgrass_people! One of my recent health goals is to consume more green things." Sydney Antares of Big Taste, Lean Waste

Recipe for waffles:

  • 1/4 cup Otto's Cassava Flour
  • 1 tsp Pines Wheat Grass powder
  • Scant 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/8 -1/4 tsp cinnamon
  • 1/2 banana
  • 1 whole egg
  • 3/4 tsp vanilla extract
  • 2 tsp coconut oil from Nutiva
  • Dropper of SweetLeaf stevia (optional but do it)
  • 1/3 cup cashew milk (any non-dairy milk is fine)

Preheat waffle iron. Combine everything in a blender until smooth. Makes two amazing waffles!

In an effort to pack as much color and nutrients into my food as possible, I also added 1/4 tsp more wheatgrass powder (to create a full serving of wheatgrass powder) to plain Greek yogurt mixed with powdered erythritol sweetener from Anthony's goods. I then used butterfly pea flower extract from Wild Hibiscus and decorated the waffle with the fortified yogurt containing tons of health benefits!
