Vegan Avocado Toast with Super Greens

We combined several superfoods into an Avocado Toast recipe that would make for a satisfying brunch, lunch or weeknight meal. You won’t even miss the eggs, and the avocado spread has an added nutritional boost from Pines WheatGrass Powder.  Enjoy! 


Ingredients: 

  • 1 tsp. Olive Oil
  • 2 tbp. Onions, chopped (we used red onions) 
  • ½ cup Egg Substitute product

Handful of chives, chopped for garnish. Use Chive blossoms if you can find them in season.  

  • 1 Avocado, mashed
  • ½ Lemon, juiced
  • 1 ¼ tsp. Pines WheatGrass powder 
  • High-Protein, Low Carb Flatbread 

Make Vegan Egg Scramble: Heat olive oil and cook onions till translucent. Add egg substitute product (we used JUST Egg) and cook using a rubber spatula, stirring until just set. Set aside off heat. 


Prepare Avocado Spread: Mash avocado in a bowl with lemon juice. Add a dash of salt and Pines WheatGrass Powder. Lightly toast flatbread, and then arrange vegan egg scramble on flatbread. Top with avocado spread and garnish with chives.
