Oat Crust
- ¾ cup oat flour
- 3 tablespoons maple syrup
- 1 tablespoon of almond milk if needed for the dough to stick
Cashew Filling
- 1 cup cashews, soaked overnight and drained
- 2 tablespoons almond milk
- 2 tablespoons Pines beet juice powder
- 3 tablespoons maple syrup
Directions:
In a bowl, mix the crust ingredients and then evenly press the dough into a parchment lined pan. Set aside.
In a food processor, add all of the filling ingredients and blend until smooth. Pour on top of the crust layer and smooth out.
Set in the freezer overnight, top with blueberries and anything else you like. (I also drizzled some macadamia butter over the top!) Enjoy!
