White Bean Pasta Salad


• Juice of 1 lemon
2 Tbsp. olive oil
¼ tsp. sea salt
¼ tsp. black pepper
1 Tbsp. Dijon mustard
1 Tbsp. Pines Green Duo (or any variety of Pines)
2 cans Great Northern Beans, rinsed
1 cup cherry tomatoes, cut in half
1 cup cucumber, peeled, seeded and diced
½ cup avocado, chopped
¼ cup chopped black olives
¼ cup red onion, chopped
¼ cup fresh chopped herbs--parsley, basil or cilantro

Add lemon juice, olive oil, salt and pepper to a large bowl. Whisk in mustard and wheatgrass. Stir in all remaining ingredients.
Serve immediately or chill.
