White Bean Pasta Salad

• Juice of 1 lemon
• 2 Tbsp. olive oil
• ¼ tsp. sea salt
• ¼ tsp. black pepper
• 1 Tbsp. Dijon mustard
• 1 Tbsp. Pines Green Duo (or any variety of Pines)
• 2 cans Great Northern Beans, rinsed
• 1 cup cherry tomatoes, cut in half
• 1 cup cucumber, peeled, seeded and diced
• ½ cup avocado, chopped
• ¼ cup chopped black olives
• ¼ cup red onion, chopped
• ¼ cup fresh chopped herbs--parsley, basil or cilantro
DIRECTIONS:
Add lemon juice, olive oil, salt and pepper to a large bowl. Whisk in mustard and wheatgrass. Stir in all remaining ingredients.
Serve immediately or chill.
